  • 3 tablespoon tomato paste
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon white wine vinegar
  • 1 tablespoon honey
  • 3 tablespoon oil
  • 1 teaspoon pepper (Tellicherry pepper)
  • 0.5 teaspoon ½ cumin
  • 1 teaspoon mustard seeds
  • 0.5 teaspoon ½ thyme
  • 0.5 teaspoon ½ marjoram
  • 2 teaspoons paprika powder, hot
  • 0.5 teaspoon ½ cayenne pepper
  • 1 teaspoon salt

Instructions

  1. Grind Tellicherry pepper, cumin and mustard seeds and mix with thyme, marjoram, paprika powder and cayenne pepper.
  2. Mix the tomato paste, balsamic vinegar, white wine vinegar, honey, prepared spices and a little salt in a bowl. Add oil and mix well.
  3. The marinade is sufficient for approx. 1 kg of meat, such as B. Spare ribs. Brush the meat with the marinade and marinate for at least 1 hour before further preparation.
