Ingredients

  • 1 large sweet potato (s), diced
  • 6 spring onions, cut into rings
  • 2 tablespoon peanut butter, creamy
  • 3 cloves garlic, finely chopped
  • 1 ½ liter vegetable stock
  • 1 teaspoon cayenne pepper
  • possibly parsley, and roasted peanuts, for garnish

Instructions

  1. Peel the sweet potatoes and cut into cubes. Peel or clean the garlic and spring onions and cut into small pieces.
  2. Put the sweet potatoes, spring onions, garlic, peanut butter and cayenne pepper in the food processor and puree.
  3. Bring the vegetable stock to the boil, add the puree and cook for 3 minutes. Turn the stove down and let the soup simmer for another 30 minutes.
  4. Garnish with parsley and roasted peanuts as an option.
