Ingredients

For the salad:

  • 500 g potatoes (salad)
  • 2 tablespoon vinegar, neutral
  • 2 tablespoon oil, neutral
  • 150 ml vegetable stock
  • 1 teaspoon mustard, medium hot
  • 0.5 ½ onion (s), finely chopped
  • salt and pepper

For the meat:

  • 2 chicken breasts
  • Flour
  • 1 egg (s)
  • 2 tablespoon mineral water
  • Breadcrumbs
  • 3 tablespoon pumpkin seeds, chopped
  • Oil, neutral, for frying

For the salad:

  • leaf lettuce, green and red, including lamb`s lettuce
  • tomato
  • White wine vinegar
  • Pumpkin seed oil
  • garden cress
  • chives

Instructions

  1. Boil potatoes with their skin on, peel and cut into slices. Mix the warm broth with mustard and vinegar and pour over the potato slices. Mix carefully, let it steep briefly, mix with the oil and onions.
  2. Cut the chicken breasts into three strips each. Dab with kitchen paper. Whisk the egg with the mineral water, season with salt and pepper. Mix the chopped pumpkin seeds with breadcrumbs.
  3. Bread the chicken strips alternately in flour, egg and breadcrumbs / pumpkin seed mix.
  4. Heat the oil in a pan and bake the chicken strips until golden on both sides. Drain on kitchen paper.
  5. Dress the lettuce leaves and tomatoes with a dressing made from white wine vinegar, salt, pepper and pumpkin seed oil.
  6. Arrange loosely on plates with the potato salad. Arrange the baked chicken strips on the salad. Sprinkle the salads with cress and chives.
