Ingredients
- 2 bell peppers (pointed peppers), yellow, cut into strips
- 3 tomato (s), cut into eighths
- 0.5 ½ zucchini, raw, thinly sliced
- 0.5 ½ bunch spring onion (s), cut into rings
- 2 cup / s rice, cooked
- salt
- pepper
- 0.25 clove ¼ garlic, crushed
- 2 tablespoon vinegar
- 1 tablespoon olive oil
- 5 basil leaves, fresh, cut into strips

- Mix the marinade in a bowl, mix in the chopped vegetables and finally the rice and basil.
- The quantities given are approximate and can be varied as desired. And the salad tastes good with brown rice, basmati or parboiled rice.
