Ingredients

  • 2 bell peppers (pointed peppers), yellow, cut into strips
  • 3 tomato (s), cut into eighths
  • 0.5 ½ zucchini, raw, thinly sliced
  • 0.5 ½ bunch spring onion (s), cut into rings
  • 2 cup / s rice, cooked
  • salt
  • pepper
  • 0.25 clove ¼ garlic, crushed
  • 2 tablespoon vinegar
  • 1 tablespoon olive oil
  • 5 basil leaves, fresh, cut into strips

Instructions

  1. Mix the marinade in a bowl, mix in the chopped vegetables and finally the rice and basil.
  2. The quantities given are approximate and can be varied as desired. And the salad tastes good with brown rice, basmati or parboiled rice.
  3. Since it is prepared without perishable ingredients, it is great to take with you to work, even if there is no refrigerator.
