Ingredients

  • 100 g almonds, round
  • 100 g flaked almonds
  • 100 g protein powder
  • 100 g flour, possibly whole rain
  • 1 teaspoon, heaped baking powder
  • 1 pinch (s) salt
  • 0.5 teaspoon ½ nutmeg
  • 2 teaspoons cinnamon powder
  • 150 g suar, brown
  • 3 tablespoon stevia sweetener
  • 150 ml rapeseed oil
  • 240 g applesauce, sweetened
  • 400 g zucchini, rated
  • 3 egg (s)
  • Fat for the mold or baking paper

Instructions

  1. Preheat the oven to 175 ° C (top / bottom heat). Grease a large loaf pan or line it with baking paper.
  2. Put a handful of flaked almonds aside to sprinkle the cake, coarsely chop the rest. Combine all dry ingredients except sugar and stevia in a bowl. The amounts and proportions of sugar and stevia can be varied at will.
  3. Mix all remaining ingredients in a second large bowl with a hand mixer. Add the dry ingredients and work everything into a dough - the dough is quite runny, but will rise nicely in the oven.
  4. Put the dough in the baking pan and bake for about 1 hour. You can also bake muffins from the (remaining) batter. The baking time is then approx. 20 minutes. For me, the recipe is enough for a medium-sized loaf pan and about 6 muffins.
