Ingredients

  • 2 sweet potato (s)
  • 2 tablespoon cornstarch
  • 1 teaspoon paprika powder, possibly smoked
  • sea-salt
  • Frying fat

Instructions

  1. Peel the potatoes and cut into 8 mm thick sticks with a sharp paring knife. Soak the fries for 1 hour, then dry them.
  2. Put the cornstarch in a large freezer bag and add the fries. Seal the bag and spin evenly so that all of the fries are evenly dusted.
  3. Then fry the fries in a deep fryer for 5 minutes at 140 degrees Celsius.
  4. Drain the fries and fry again for 5 minutes at 170 degrees Celsius.
  5. When deep-frying, make sure that there are not too many fries in the basket, otherwise they will stick together and not get crispy.
  6. Before serving, dust with a little salt and, if you like, with paprika powder.
