Ingredients

  • 4 spring onion (s)
  • 1 tablespoon butter
  • 1 lemon (s), untreated - zest and juice it
  • 4 tablespoon sherry
  • 250 g crème fraîche
  • 250 ml whipped cream
  • 500 g ribbon pasta (taliatelle)
  • 60 g parmesan cheese
  • salt and pepper
  • sugar
  • Lemon balm for the garnish

Instructions

  1. Cook the noodles in plenty of salted water until they are firm to the bite.
  2. In the meantime, cut the 4 spring onions into rings and fry in butter. Add the lemon zest, crème fraîche, cream and sherry, add about 2 tablespoons of lemon juice. Simmer for 5 minutes, add salt and pepper. If necessary, add lemon juice or a little sugar to taste.
  3. Mix with pasta and parmesan, or serve the cheese separately. Garnish with lemon balm if desired.
