Ingredients
- 500 g chicken breast fillet (s)
- 1 bag spinach leaves, fresh, approx. 500 - 600 g, washed
- 500 ml vegetable stock
- 1 can coconut milk, 400 ml
- 1 chilli pepper (s), finely chopped
- 1 onion (s)
- salt and pepper
- 1 pack shirataki noodles (konjak glass noodles), 00 g
- oil

- Cut the meat bite-sized and fry in a little oil in a large saucepan with the chopped chilli. Dice the onion and fry until translucent. Now pour in the coconut milk and bring to the boil briefly. Add the vegetable stock and bring to the boil briefly. Now stir in the spinach leaves and season with salt and pepper. Let the soup boil for about 10 minutes. Prepare the konjac glass noodles according to the package instructions. First place the glass noodles on the plate and then pour the soup over them. Annotation: If the glass noodles are put into the pot with the soup, they will soften too much. The soup also tastes good when prepared with normal glass noodles, but is then no longer low carb.
