Ingredients

  • 250 ml vegetable stock
  • 1 stick lemongrass
  • 1 piece (s) ginger, the size a thumb
  • 1 zucchini
  • 1 carrot (s)
  • 14 sugar snap peas
  • 14 small broccoli florets
  • 7 ears corn
  • 1 can coconut milk
  • 10 small mushrooms
  • 0.5 ½ onion (s)
  • 3 tablespoon soy sauce
  • 2 tablespoon lime juice

Instructions

  1. Today there is something delicious Asian, because I have prepared a Tom Kha Jay soup for you. I came across it again through an English blog and was of course absolutely thrilled. Since I`ve never been to Thailand and really wanted to cook something halfway authentic, I decided on this soup because it is vegan and contains a lot of healthy vegetables and is a little light bringer in the cold winter. For me it is an optimal light meal in this cold, dreary weather. The many vegetables fill you up, provide you with vitamins and the ginger warms you up from the inside.
  2. 1. Put the vegetable stock in a saucepan and bring to the boil.
  3. 2. Press the lemongrass and then cut it into strips.
  4. 3. Peel and finely dice the ginger, add to the broth with the lemongrass and simmer for 10 minutes.
  5. 4. Cut the vegetables into very small slices or pieces and set aside.
  6. 5. Add the coconut milk to the soup and stir.
  7. 6. Cut half the onion into very thin slices.
  8. 7. Take the ginger and lemongrass pieces from the soup and round off the soup with soy sauce and lime juice.
  9. 8. Spread all the vegetables on the plates and finally pour the very hot broth over them.
