Ingredients

  • 6 spring onion (s)
  • 2 cloves garlic)
  • 700 ml tomato (s), happened
  • 400 ml coconut milk
  • 150 ml vegetable stock
  • 1 orange (s), 4 tablespoons juice
  • 1 tablespoon sugar
  • salt and pepper
  • Chilli pepper (s), chopped, or sambal oelek
  • some oil

Instructions

  1. Finely chop the spring onions and garlic. Sauté both in a saucepan with oil over medium heat until lightly colored. Put the tomatoes, coconut milk, vegetable stock and the juice of the orange in the saucepan and simmer for about 8 minutes over low heat. Stir every now and then, of course.
  2. Add salt, pepper, sugar and the hot spice. Stir again and simmer for 2 minutes. Finally, season again to taste.
