Ingredients

  • 6 slices white bread, thin, one day old, without crusts
  • 2 onion (s), diced
  • 2 cloves garlic, diced
  • 1 red pepper (s), cut into strips
  • 1 green pepper (s), cut into strips
  • 3 tablespoon olive oil
  • 1 kg tomato (s), roughly diced
  • 2 tablespoon tomato paste
  • 1 teaspoon thyme, dried
  • 1 tablespoon vinegar (red wine vinegar)
  • 2 teaspoons sugar
  • salt and pepper

Instructions

  1. Steam the onions, garlic and paprika. Add the remaining ingredients and simmer until a thick sauce is formed. Season with salt and pepper.
  2. Line a pudding pan with slices of bread. Pour in the sauce and cover with slices of bread. Cover with a plate and weigh down a heavy object. Put in the fridge overnight.
  3. Turn out onto a plate just before serving.
