Ingredients
- 6 slices white bread, thin, one day old, without crusts
- 2 onion (s), diced
- 2 cloves garlic, diced
- 1 red pepper (s), cut into strips
- 1 green pepper (s), cut into strips
- 3 tablespoon olive oil
- 1 kg tomato (s), roughly diced
- 2 tablespoon tomato paste
- 1 teaspoon thyme, dried
- 1 tablespoon vinegar (red wine vinegar)
- 2 teaspoons sugar
- salt and pepper

- Steam the onions, garlic and paprika. Add the remaining ingredients and simmer until a thick sauce is formed. Season with salt and pepper.
- Line a pudding pan with slices of bread. Pour in the sauce and cover with slices of bread. Cover with a plate and weigh down a heavy object. Put in the fridge overnight.
- Turn out onto a plate just before serving.
