Ingredients

  • 40 g pearl barley
  • 350 ml tomato juice
  • 150 ml vegetable stock
  • 1 small Bunch basil
  • 2 tablespoons oil
  • 2 tablespoon parmesan
  • pepper
  • salt
  • bread (e.g. bread by the meter or similar)

Instructions

  1. Put pearl barley in a colander and rinse with warm water. Bring to a boil with tomato juice and broth in a saucepan. Simmer for 25 minutes until the pearl barley is soft.
  2. In the meantime, wash the basil and pluck the leaves off. Puree with oil and parmesan in a tall mug to make a creamy paste.
  3. Season the soup with salt and pepper, serve with pesto and serve with bread.
