For the shortcrust pastry, quickly knead 1 egg, butter, flour and 1 tablespoon of cold water as well as 1 tablespoon of chopped rosemary to form a smooth dough. Roll out the dough on a greased baking sheet.
For the topping, mix together goat cream cheese, 2 eggs, honey, mustard and 2 tablespoons of chopped rosemary and season with salt and pepper. Spread the goat cream cheese mixture on the dough, cover with tomato slices cut as thick as a finger and top with thinly cut onion rings.
Bake in a hot oven at 180 ° C top / bottom heat for about 30 minutes.
Sprinkle fleur de sel on top as you like.
The tart tastes very good with a green salad and also cold. Tomatoes with a very good taste are important!
