Ingredients

For the shortcrust pastry:

  • 1 egg (s)
  • 125 g butter
  • 250 g flour
  • 1 tablespoon water, cold
  • 1 tablespoon rosemary, chopped
  • Grease for the tin

For covering:

  • 250 g oat cream cheese
  • 2 egg (s)
  • 1 tablespoon honey
  • 1 tablespoon mustard
  • 2 tablespoon rosemary, chopped
  • Salt and pepper
  • 1 ½ kg oxheart tomato (s), colorful
  • 1 onion (s), e.g., red sweet Tropea
  • Fleur de Sel for sprinkling

Instructions

  1. For the shortcrust pastry, quickly knead 1 egg, butter, flour and 1 tablespoon of cold water as well as 1 tablespoon of chopped rosemary to form a smooth dough. Roll out the dough on a greased baking sheet.
  2. For the topping, mix together goat cream cheese, 2 eggs, honey, mustard and 2 tablespoons of chopped rosemary and season with salt and pepper. Spread the goat cream cheese mixture on the dough, cover with tomato slices cut as thick as a finger and top with thinly cut onion rings.
  3. Bake in a hot oven at 180 ° C top / bottom heat for about 30 minutes.
  4. Sprinkle fleur de sel on top as you like.
  5. The tart tastes very good with a green salad and also cold. Tomatoes with a very good taste are important!
