Ingredients

  • 180 ml oil (good olive oil)
  • 60 ml vinegar (red wine vinegar)
  • Salt and pepper to taste
  • 1 medium tomato (s), ripe, (peeled, pitted & mashed)
  • 1 tablespoon tomato paste
  • 3 tablespoon crème fraîche or sweet cream

Instructions

  1. Mix the olive oil, red wine vinegar, salt and pepper in a small bowl with a whisk. Add the tomato and tomato paste and mix well. Finally stir in the creme fraiche or cream and season to taste again.
