Ingredients
- 500 g tortellini, dried, with cheese fillin
- 3 red pepper (s)
- 250 g lamb`s lettuce
- 100 g pine nuts
- 250 g mini mozzarella
- 10 tablespoon walnut oil
- 5 tablespoon vinegar, milder
- salt and pepper

- Cook the tortellini in plenty of salted water.
- In the meantime, cut the peppers into very small cubes and wash the lamb`s lettuce. Lightly toast the pine nuts in a pan. Prepare a light dressing with oil, vinegar, salt and pepper.
- After the tortellini have cooled down (I sometimes scare them off with cold water, then it goes faster), mix all the ingredients together.
- Tip: You can also prepare the salad a day in advance. Then on the actual day of consumption just add the lamb`s lettuce and dressing shortly before.
- The salad is the first to go at every celebration.
