Ingredients

  • 250 g tortellini
  • salt and pepper
  • 400 g mozzarella
  • 1 onion (s)
  • 2 small zucchini
  • 1 bunch basil
  • 1 teaspoon mustard (medium hot)
  • 1 tablespoon tomato paste
  • 3 tablespoon vinegar (red wine vinegar)
  • 5 tablespoon olive oil

Instructions

  1. Cook the tortellini in plenty of salted water.
  2. Cut the mozzarella into small cubes. Finely chop the onion, cut the zucchini into small cubes. Pluck the basil from the stems, wash and dry.
  3. Put the pasta, mozzarella, onion, zucchini and basil (save some leaves for decoration) in a bowl.
  4. Mix the mustard, tomato paste, red wine vinegar, olive oil, salt and pepper into a marinade and pour over the salad.
  5. Let the salad stand for 15 minutes and sprinkle with the remaining basil leaves.
