Tortellini with Meat Filling in Tomato Sauce

Ingredients

  • pork (ham) – 500g

  • wheat flour – 500g
  • egg – 3 pcs.
  • olive oil – 1 tablespoon
  • water – from 3 tablespoon. up to 1/4 cup

  • tomatoes in their own juice – 1 can (about 300 ml)
  • chicken broth – 1 glass
  • starch – 2 teaspoon
  • garlic – 2 cloves
  • fresh herbs, salt, ground black pepper (or a mixture of peppers) – to taste

Directions

  1. For the mince, chop the meat finely, finely, mix with finely chopped herbs, very finely chopped onion, season with salt and pepper and knead until smooth. Cover the bowl with the minced meat with foil and put in the refrigerator.
  2. For the dough, sift the flour into a bowl (or on a work surface), make a well in the centre and pour an egg, butter and 3 tablespoons into it. cold water. Stir the ingredients with 2 flat-bladed knives.
  3. Then knead a smooth and elastic dough with your hands or in a food processor. Add water as needed. Cover the finished dough with a damp cloth and leave for 30-40 minutes at room temperature.
  4. Sprinkle a little flour on the work surface, separate a quarter of the dough and roll it into a thin layer. Roll out from the centre outward. Leave the rest of the dough in a bowl, covered with a wet napkin so that the dough does not dry out. Using a glass or a mould, cut out circles with a diameter of 3-4 cm.
  5. Place 1/2 teaspoon on each circle. meat filling, trying to place the filling closer to one edge. With a damp brush, moisten half of a mug, fold it into a crescent shape and press the edges firmly.
  6. Wrap a crescent moon around your finger and connect the ends. Pre-moisten the tips with water.
  7. Boil water in a large saucepan. When the water boils, add 1-2 tablespoons. vegetable oil. Boil tortellini in portions until tender, catch with a slotted spoon, transfer to a dish and cover.
  8. For the tomato sauce to be served with tortellini, heat the olive oil in a deep skillet and lightly fry the finely chopped garlic in it. Chop the tomatoes in their own juice in a blender and pour into the pan. Cook for about 5 minutes, then add the chicken broth, season with salt, ground pepper (black or pepper mixture), add finely chopped herbs. Dissolve the starch with 1 tablespoon of cold water and pour into the tomato sauce. Stir and remove the sauce from the stove. Now you need to take the boiled tortellini and put them in the sauce. Shake the skillet so that more sauce sticks to the tortellini and arrange the dish on the plates. Try it. Delicious.
