Turkey Stewed with Zucchini and Bell Pepper

Turkey stewed with zucchini, bell peppers, carrots and onions is a great option for a healthy and light dinner. Juicy vegetables enrich the flavor of the tender turkey. And add basil and garlic to the dish for extra flavor.

Ingredients

  • Turkey (fillet or thighs) – 500 g
  • Zucchini – 300 g (1 pc.)
  • Bulgarian red pepper – 1 pc.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Garlic – 2 cloves
  • Salt to taste
  • Ground black pepper – to taste
  • Dried basil – 0.5 teaspoon
  • Water (boiling water) – 1 glass of 250 ml
  • Vegetable oil – 4 tbsp
  • Fresh basil (for serving) – 1-2 sprigs

Directions

  1. Rinse and dry the turkey. Cut the turkey meat into medium-sized slices.
  2. Heat the pan, add 2 tablespoon. tablespoons of vegetable oil put the turkey. Fry for 3-4 minutes, stirring occasionally, until a light crust forms on the turkey meat. Then transfer the meat to a plate.
  3. Peel, rinse, and dry the carrots and onions. Cut the onion into small cubes, grate the carrots on a medium grater.
  4. Rinse the bell peppers, remove the stalk and seeds. Cut the pepper into small cubes. Rinse the zucchini, cut off the ends. Cut the courgette into small pieces.
  5. In the same pan in which the meat was fried, heat the remaining oil, put the prepared vegetables, and fry them for 4 minutes, stirring with a spatula.
  6. Then put the turkey to the vegetables, add chopped garlic, salt, and pepper to taste.
  7. Add basil, pour in water (boiling water). Cover the pan with a lid and simmer the turkey and vegetables for 30 minutes.
  8. After the specified time, check the readiness of the meat, salt if necessary.
  9. The turkey stewed with zucchini and bell peppers is ready. You can serve it with different side dishes: buckwheat porridge, mashed potatoes, or with fresh vegetables and herbs.
