Ingredients

  • 60 g chickpea flour
  • 2 tablespoon yeast flakes
  • 1 tablespoon flaxseed, ground
  • 1 tablespoon soy sauce
  • 0.5 teaspoon ½ kala namak
  • 0.25 teaspoon ¼ turmeric
  • 0.25 teaspoon ¼ baking powder
  • 0.25 teaspoon ¼ paprika powder, noble sweet
  • 150 ml water

For the vegetables:

  • 5 broccoli florets
  • 1 onion (s), red
  • 0.5 ½ bell pepper (s), red
  • salt and pepper

Instructions

  1. Mix the omelette ingredients from the chickpea flour to the water in a bowl and let rest for 10 minutes.
  2. Heat enough oil in 2 medium-sized pans. Spread the omelette batter in one pan and fry for 5 minutes on each side.
  3. Put the fried vegetables in the other pan, fry them as well and season with salt, pepper and spices to taste.
  4. Slide the omelette onto a plate, arrange the roasted vegetables on top and fold the top half over.
  5. Tip: Chickpea batter is difficult to turn and tends to break easily. You can make it easier for yourself by searing the omelette over medium heat with the lid closed for 3 minutes, until the batter starts to thicken. Then add the fried vegetables and fry the omelette for another 5 minutes. Slide it onto a plate and then fold it over.
