  • 8 date (s), dried
  • 1 handful walnuts
  • 4 tablespoon olive oil

Instructions

  1. Cut the aubergine into small cubes and the shallot into thin rings. Dice the dates very small. Roughly chop the walnuts.
  2. Fry everything together in a pan. Let it simmer in the hot pan with the lid on and season with salt and pepper.
  3. What you can eat this for: white bread, pasta, pancakes, as an oriental accompaniment to vegetables and red lentils etc.
