Ingredients

  • 3 potato (s)
  • 3 pickle (s)
  • 2 onions)
  • salt and pepper
  • Vegetable oil

Also: (for the vegan scrambled eggs)

  • 5 tablespoon chickpea flour
  • 2 tablespoon soy flour
  • 1 tablespoon white wine vinegar
  • 1 teaspoon kala namak
  • 0.25 teaspoon ¼ turmeric
  • 250 ml mineral water

Instructions

  1. Cut the potatoes into small cubes, halve the onion and slice lengthways. Heat vegetable oil in a pan. Fry the potatoes and onions for 20 minutes over medium heat while stirring, seasoning with salt and pepper.
  2. Meanwhile, stir the ingredients for the vegan scrambled eggs with a whisk and leave to soak for 10 minutes. Pour over the potatoes and onions and let stand for 5 minutes with the lid closed. Turn and fry on the other side for 5 minutes with the lid closed. Cut the pickles into slices and serve with the farmer`s breakfast.
