Vegan Kaiserschmarrn with Chia Seeds

Ingredients

For the dough:

3 tablespoon chia seeds, approx. 15 g per
250 ml soy milk (soy drink) or another plant-based drink
100 g flour
40 g almonds, round or nuts, round
0.5 ½ pack baking powder
20 g suar
raisins, berries, bananas, nuts, chopped chocolate, rum, cherries, plums, cocoa powder

Also:

some powdered sugar and / or cinnamon to sprinkle
some oil for frying

Instructions

Let the chia seeds soak in 100 ml soy milk for about 30 minutes. Mix the remaining dry ingredients together in a separate bowl. As soon as the chia seeds are swollen, add them together with the rest of the soy milk and mix everything together. If the mixture is still too tough, add a little more vegetable milk.
Heat some oil in a pan and add the batter. If it bubbles, use a spatula to divide the dough into 4 parts and turn the parts. Use the spatula to cut the dough into even smaller pieces and continue frying until the dough is golden brown.
At the end, sprinkle the pancakes with powdered sugar and / or cinnamon.
If you like, you can refine the Schmarren with nuts, spices, fruit, cocoa or rum.
