Ingredients
- 130 g cashew nuts
- 130 ml water
- 4 tablespoon lemon juice, fresh
- 1 tablespoon apple cider vinegar, vegan
- 3 large potatoes, preferably floury, cooked, possibly from the day before
- 0.5 ½ onion (s) or shallot
- salt and pepper
- Chives or spring onions, fresh

- For the `sour cream preparation`, grind the cashew nuts and then whip them up with water, lemon juice, vinegar and 2 pinches of salt.
- Mash the potatoes. Peel and dice the onion.
- Add the `sour cream preparation`, onions and salt and pepper to the potatoes and season to taste. Garnish with chives or spring onions.
- Tastes good with bread, rolls or raw vegetables.
