Ingredients

  • 80 g quinoa
  • 130 g canned chickpeas
  • 100 g carrot (s), cut into small cubes or slices
  • 80 g peas
  • 0.5 ½ mango (s), cut into small cubes
  • 50 g nuts, mixed, with raisins
  • 1 teaspoon curry powder
  • 100 ml coconut milk

Instructions

  1. Let the quinoa cook for 10 minutes according to the instructions on the packet. Fry the chickpeas, carrots and peas in a wok with a little olive oil. One after the other, add the quinoa, the nut mixture with raisins, the mango, the curry powder and the coconut milk, stirring occasionally.
