Vegetable Soup with Tortellini (from the “Quick Soups” Series) Ingredients

  • 250 gr. tortellini with any filling (I have tricolour tortellini with ham)
  • 1 onion
  • 1-2 tablespoon olive oil
  • 400 gr. any frozen vegetable mix (I have carrots, cauliflower, broccoli, green peas)
  • 1.2 cloves of garlic
  • salt, white pepper
  • ½ teaspoon mixtures of Provencal herbs

  1. Peel the onion and garlic and chop finely.

  2. Heat the olive oil in a saucepan and lightly fry the onion and garlic in it.
  3. Add frozen vegetables to a saucepan and saute until completely melted.
  4. Pour vegetables with water, salt and pepper, add Provencal herbs, bring to a boil and put tortellini in the soup. And cook the soup for 15 minutes.

  5. Pour the finished soup into plates, sprinkle with finely chopped herbs and serve.
