Vegetarian Rassolnik Ingredients

  • Cabbage – 200 g
  • Carrots – 1 pc.
  • Onions – 1 pc.
  • Pickled cucumbers – 3-4 pcs.
  • Tomatoes – 2-3 pcs.
  • Rice – 100 g
  • Potatoes – 2-3 pcs.
  • Vegetable oil – 30 g
  • Water – 2.5 l
  • Peppercorns – 5-7 pcs.
  • Pepper – 1 pinch
  • Bay leaves – 1-2 pcs.
  • Fresh herbs – to taste
  • Salt – to taste

How to cook a vegetarian rassolnik:

  1. Dice the potatoes and rinse the rice well.
  2. Boil 2.5 liters of water. Add the potatoes and rice. Cook over medium heat for 15 minutes.
  3. Chop the onion.
  4. Grate the carrot on a coarse grater.
  5. Dice the pickled cucumbers.

  6. Grate the tomatoes.

  7. Pour some vegetable oil into a frying pan. Place the prepared onions and carrots in the hot oil. Stew, stirring occasionally, over medium heat for 1-2 minutes.
  8. Add the grated tomatoes. Stew, stirring occasionally, for 3-4 minutes.
  9. Add the cucumbers. Stew all together for 5-7 minutes.

  10. Cut the cabbage into thin strips and put it in the soup.

  11. Add the fried-up vegetables. Salt and pepper.
  12. Simmer the vegetarian rassolnik under the lid gently for 10 minutes.
  13. Wash and finely chop the herbs. Add them to the soup.
