Watermelon, Raspberry and Mint Salad

Light and a juicy salad of watermelon, raspberry, and mint with lime and honey juice dressing turn out to be very fresh and original in taste. This salad is best served for dessert. A bright, refreshing, and very healthy dish!
Servings: 2
Ingredients
- Watermelon (pulp) – 400 g
- Fresh raspberries – 150 g
- Fresh mint – 1-2 sprigs
- Liquid honey – 2 teaspoon
- Lime (juice) – to taste
Directions
- Separate the pulp of the watermelon from the peel, remove the seeds.
Cut the watermelon pulp into cubes. - For salad dressing, mix honey with lime juice.
- Finely chop the mint leaves and add to the watermelon.
- Pour half of the dressing over the watermelon with mint.
- Mix gently.
- Divide the salad into portions. Pour a handful of raspberries into each serving and pour over the rest of the honey-lime dressing.
- Serve the watermelon, raspberry, and mint salad immediately after cooking.
