Ingredients

  • 3 egg (s)
  • 1 teaspoon salt
  • Pepper, black, freshly ground
  • 450 g wild rice, cooked or a mixture wild and brown rice
  • 225 g broccoli florets
  • Spring onion (s), approx. 2 - 3, cut into rings
  • 170 g cheddar cheese, hot, rated
  • Butter for frying
  • Olive oil for frying

Instructions

  1. Mix the eggs, salt and pepper together.
  2. Mix the rice, broccoli, spring onions and cheese in a large bowl and stir in the egg mixture.
  3. Heat a large pan over medium heat. Add olive oil and butter in equal parts (about 1 tablespoon each).
  4. As soon as the butter and oil mixture is warm, spoon about 1 1/2 tablespoons of rice mixture into the pan and gently squeeze it into flat buffers. Fry the pancakes on both sides.
  5. Healthy vegetable and cheese pancakes. Serve the wild rice pancakes with bacon or sausage for a hearty breakfast or for a light lunch or dinner.
