Pine nuts go well with wild rice, cherry tomatoes and basil complement the dish.
Ingredients
Wild rice – 240 g
Pine nuts – 1/4 cup
Cherry tomatoes (cut into quarters) – 8 pcs.
Fresh basil (chopped) – 1 tbsp
Butter – 1.5 tbsp
Ground black pepper – 1/2 teaspoon.
Salt – 1/4 teaspoon.
Directions
Boil wild rice until cooked, according to package instructions.
In a large skillet over medium heat, heat the butter, add the pine nuts and tomatoes, cook, stirring occasionally, for about 8 minutes.
Add boiled wild rice, 1 tablespoon of basil, 1/2 teaspoon of black pepper and 1/4 teaspoon of salt to the pan, stir well, cook the wild rice with tomatoes and pine nuts for about 1 minute.
