Ingredients

  • 2 zucchini, 500 g - 600 g
  • 0.5 ½ bulb garlic, Chinese single-clove garlic or 2 cloves garlic
  • 3 tablespoon olive oil
  • 0.5 teaspoon ½ salt
  • 0.5 ½ sprig rosemary
  • 1 teaspoon thyme, finely chopped
  • 4 sage leaves
  • 2 sprigs basil

Instructions

  1. Wash the zucchini and cut lengthways into strips with the asparagus peeler. Transfer to a large bowl. Cut the garlic into small cubes, pluck the rosemary needles and thyme leaves. Cut the herbs into small pieces except for the basil. Mix the herbs, salt and oil well and pour over the zucchini strips. Mix everything well, leave to marinate for about 30 minutes (can also steep longer).
  2. Heat a large pan with a high rim, add the zucchini and cook for about 5 minutes. Shred the basil into small pieces except for a garnish and pour over the zucchini noodles.
  3. Serve with baguette or briefly roasted meat.
