Ingredients

  • 3 small zucchini
  • 10 cocktail tomatoes
  • 2 tablespoon pesto, homemade if possible
  • 2 tablespoon parmesan, freshly grated
  • 2 tablespoon pine nuts
  • some olive oil

Instructions

  1. Wash the zucchini, remove the ends of the stems and slice them into thin slices. Wash tomatoes and cut in half.
  2. Brown the pine nuts in a non-stick pan, set aside. Heat the olive oil in the same pan, fry the zucchinis well. Add tomatoes and fry briefly.
  3. Fold in the pesto, parmesan and pine nuts. Season with salt and pepper.
  4. Involtini, chicken fillet or fish go well with this.
