Ingredients
- 1 ½ kg zucchini
- 3 tablespoon salt
- 500 g onion (s)
- 500 ml vinegar (wine vinegar)
- 500 g suar
- 1 ½ tablespoon mustard
- 1 ½ tablespoon paprika powder
- 1 tablespoon curry
- 1 tablespoon black pepper
- 0.5 tube ½ tomato paste

- Leave the zucchini (unpeeled) finely grated and let soak through the salt overnight so that they lose water.
- Finely chop the onions and bring to the boil with the vinegar. Add sugar, mustard and the squeezed zucchini grated. Let the whole thing simmer gently for about 30 minutes while stirring.
- Then season with paprika, curry, pepper and the tomato paste and cook through again.
- Fill hot into screw jars and close tightly.
