Acorn Pumpkin Stuffed with Goat Cheese and Mushrooms

In this recipe for baked pumpkin with mushrooms, pepper, and goat cheese, Guy Fieri pre-bakes the pumpkin in the oven for a few minutes and then stuffs it with a hearty, savory filling that, despite being easy to prepare, is very original.

Ingredients

Acorn Gourd:

  • 2 acorn squash
  • 2 tbsp olive oil
  • 1.5 teaspoon. coarse salt
  • 1 teaspoon crushed black pepper

Filling:

  • 2 tablespoon. cabbage (remove the stalk before slicing)
  • 1 red bell pepper, seeded and cut into 1-inch strips
  • 1 seeded and cut into 1-inch strips yellow bell pepper
  • 2 tbsp (30 gr.) Butter
  • 1 tablespoon. cut into rings
  • 0.5 cm. Sweet onions Salt and ground black pepper
  • 2 tablespoon. peeled and quartered cremini mushrooms
  • 2 cloves of garlic, minced
  • 110 g crumbled goat cheese
  • 2 tbsp chopped fresh parsley for garnish (optional)

Directions

  1. For the pumpkin: Preheat oven to 190 ° C. Cut off the top and bottom of the pumpkin.
  2. Cut it in half horizontally so that the halves stand firmly thanks to the cut pieces. Scrub out the middle of the pumpkin. Separate the seeds from the pulp and rinse. Pat the seeds dry on a paper towel.
  3. Place the pumpkin cut side down on a baking sheet, drizzle with olive oil and sprinkle with a teaspoon of salt and pepper. Place the seeds on a separate baking sheet or foil. Roast the pumpkin for 30 minutes. Bake the seeds for the same time, checking and stirring after 10 minutes, then again after 20 minutes. Depending on the size of the seeds, they can be ready in 20 minutes. or after 30 min. Sprinkle them with the remaining salt.
  4. For the filling: Place a large skillet over high heat and add the butter. When it melts, add cabbage, onion, pepper, sprinkle with salt and pepper and stir gently. Let the cabbage settle for about 5 minutes. Add mushrooms and cook for 3-4 minutes. Add the garlic and stir. Cook for 2-4 minutes more, then add salt and pepper.
  5. To assemble Preheat the grill in the oven to a low temperature. Place the filling in the baked pumpkin halves. Sprinkle with crumbled goat cheese and then toasted pumpkin seeds.
  6. Grill until cheese is warm. Sprinkle with a little Italian parsley (if using) and serve.
