Ingredients

  • 250 g asparaus, white
  • 125 g mozzarella
  • 250 g strawberries
  • 0.5 ½ cucumber (s)
  • Balsamic vinegar
  • 2 teaspoons pumpkin seed oil
  • salt and pepper
  • Curry powder
  • possibly chili powder

Instructions

  1. Peel the asparagus, cut into pieces approx. 2 cm long and cook in water. Peel the cucumber, quarter it lengthways and cut into pieces. Wash and clean the strawberries, quarter them.
  2. Place the cucumber and strawberries in a large bowl, either cut the mozzarella into small pieces or tear it up and add to the bowl as well. Drain the cooked asparagus and add to the salad (the mozzarella melts slightly due to the warm asparagus, which makes the whole thing even tastier!).
  3. Season with salt, pepper and curry, possibly add a little chili powder (but not too much!). Mix the pumpkin seed oil, balsamic vinegar and a little water and mix into the salad.
  4. Enjoy while the asparagus is still warm!
