Asparagus Soup

Asparagus or asparagus is a tasty and healthy plant, but it is still rarely used in our kitchen. Asparagus can be steamed, grilled or baked in the oven, and raw asparagus salads can be made. This is one of the earliest spring plants, so I advise you to try vitamin asparagus soup, and I will tell you how to make it.

Ingredients
- Asparagus – 1 Bunch
- Green onions – 4 pieces
- Boiled chicken breast – 500 grams
- Chicken bouillon cube – 1 Piece
- Fresh ginger root – 1 Piece
- Soy sauce – 1
- Fresh young spinach leaves – 2 Bunches
- Lemon Slice – 2 Pieces
Directions
- Peel and rinse all vegetables under cold running water. Cut the tops of the asparagus stalks and cut them in half lengthwise. Cut the remaining stems into small pieces. Cut the white part of the green onion into rings, and the feathers obliquely, 3-4 cm long.
- Pour water into a saucepan, add the bouillon cube, 6 thin slices of ginger and the white part of the onion. Bring broth to a boil, reduce heat, and simmer for 5 minutes.
- Cut the chicken fillet into thin strips, add the meat and asparagus to the broth and cook for 2 minutes.
- Stir the soup, add the baby spinach leaves, soy sauce and cook for another 2 minutes.
