Soup with White Asparagus

Ingredients

  • Broth – 1 Liter (vegetable or chicken)
  • Onion – 1 Piece
  • White Asparagus – 400 Grams
  • Cream – 100 Milliliters
  • Salt – 1 Pinch
  • Pepper – 1 Pinch
  • Butter – 1 Tbsp. the spoon

Directions

  1. The first step is to wash the asparagus and dry it with a paper towel. Clean it, remove rough edges.
  2. Send butter to the bottom of the pan, melt it. Peel and finely dice the onion. Fry in oil for a couple of minutes until golden brown. In the meantime, slice the asparagus.
  3. Place the asparagus in a saucepan and simmer for 5 minutes. Then pour in the broth, bring to a boil and reduce heat. Season with salt and pepper to taste. If you want, you can use aromatic herbs in the recipe for making white asparagus soup.
  4. Cook for about half an hour until soft. Then grind everything with an immersion (you can use a bowl) blender. A portion of the asparagus can be left whole for garnish before serving. Then send the pan to the fire again.
  5. Pour in the cream, stir and heat a little. No need to bring to a boil! Before serving, white asparagus soup at home can be supplemented with herbs, a pinch of paprika or chili, and lemon juice, for example.
