Ingredients

For the dough:

  • 250 g flour
  • 1 teaspoon salt
  • 150 g butter, cold
  • 1 egg (s)
  • 2 tablespoon cream

For covering:

  • 4 avocado (s), ripe
  • 100 g horseradish-flavored cream cheese
  • 1 egg (s)
  • 0.5 dl ½ cream, (half cream)
  • salt and pepper
  • 1 lemon (s), some juice from it and grated zest

Instructions

  1. Mix the flour and salt, cut the butter in flakes and rub it between your fingers to form a crumbly dough. Whisk egg and cream and add. Knead everything together quickly to form a smooth dough. Wrap the dough in foil and put it in a cool place for at least 30 minutes. Then roll out the dough and line it up with either 8 small buttered portion molds or a large casserole dish.
  2. Prick the dough several times with a fork and then chill again.
  3. Halve, peel and core the avocados. Cut the pulp into slices and mix immediately with the lemon juice. Mix the egg, single cream, cream cheese and lemon zest well, season.
  4. Cover the dough base with the avocado slices and spread the icing over them. Bake the quiche (s) in the oven preheated to 220 degrees for about 20-30 minutes.
