Banana Happiness

The grandchildren are very fond of banana muffins. Sometimes according to this recipe we bake one large cake, sometimes many small ones. The youngest also ordered a banana cream on top (for complete happiness). “Okay, you will have banana happiness!”

Ingredients

For cupcakes:

  • Ripe bananas – 2 pcs.
  • Eggs – 2 pcs.
  • Sugar – 0.5 cups
  • Butter – 100 g
  • Flour – 150g (330ml cup)
  • Salt – 0.5 teaspoon
  • Ground cinnamon – 0.5 teaspoon
  • Ground cloves – 0.5 teaspoon
  • Ground ginger – 0.5 teaspoon
  • Baking soda – 1 teaspoon
  • For the cream:
  • Bananas – 0.5 pcs.
  • Thick cream – 150 g
  • Sugar – 100 g

Directions

  1. Peel the bananas, mash with a fork or chop finely.

    I put all the ingredients for the dough into the processor and after a few minutes I get an excellent dough.

    I put two tablespoons of dough in molds and put them in the oven for 25 minutes at 200 degrees. You can check the readiness with a match.

    While the muffins are cooling, prepare the banana cream.

    Grind half a banana in a blender. Whisk in 150 g heavy cream, 100 g sugar and banana puree.

    Using a pastry syringe, spread the cream on the cooled muffins with a spiral. Decorate with a slice of banana. The cream was enough for half the cupcakes, just for the customer.
