Barbary Bread

Barbara – Iranian sesame bread cooked in water.

Ingredients

  • Warm water – 1/4 cup
  • Dry yeast – 2 teaspoon.
  • Wheat flour – 5 glasses
  • Salt – 1 1/2 teaspoon
  • Sugar – 3 tbsp
  • Unsalted butter (melted) – 3 tbsp
  • Warm water – 2 glasses
  • Milk – 2 tbsp
  • Sesame seeds – 1/4 cup
  • Odorless vegetable oil (for greasing a baking sheet)

Directions

  1. Pour 1/4 cup of warm water into a small bowl, add yeast and let stand at room temperature for about 5 minutes to let the yeast disperse.
  2. Pour flour into a large bowl, make a depression in the center, pour water with yeast, oil, add salt, sugar and pour the remaining warm water. Knead a homogeneous, elastic dough. Shape the dough into a ball and place in a lightly oiled bowl, cover, and place in a warm place to rise, for about an hour (during this time, the dough should be kneaded once). Put the baking sheet in the oven and turn it on to preheat to 180 degrees.
  3. Knead the matched dough and divide it into 4 parts, each of which is formed into a ball. Fold the balls of dough on a board, cover with a towel, and let stand for 20 minutes. Then roll each ball into a rectangle about 30×15 cm in size. With the edge of your palm, make longitudinal dents on the dough, at a distance of 2 cm from each other
  4. Grease the cakes with 1/2 tablespoon of milk and sprinkle with sesame seeds. Leave on for 15 minutes at room temperature. Grease a baking sheet with foil, put the cakes on it (how much will fit), bake for about 20-25 minutes, until golden brown.
