Ingredients

  • 1 ½ kg beef (hip steak)

For the marinade:

  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon garlic granules
  • 1 teaspoon onion granules
  • 6 dashes Tabasco (Chipotle-Tabasco)
  • 1 pinch (s) smoked salt
  • 150 ml Worcestershire sauce
  • 250 ml soy sauce

Instructions

  1. Parry the meat, remove most of the fat and tendons and cut into approx. 3 mm thick slices / strips.
  2. Mix a marinade from the specified ingredients and put this and the meat strips in a freezer bag, close the bag and massage the meat properly with the marinade.
  3. Let everything marinate in the refrigerator for 12 hours.
  4. Then take the meat out of the freezer bag and carefully pat dry with a kitchen roll.
  5. Leave to dry in a dehydrator or in the oven (circulating air, put something in the door so that the moisture can escape) at 50 - 60 degrees for approx. 4 - 5 hours.
  6. Store in a cool, dry and as dark as possible in a freezer bag that can be sealed.
