Press the garlic clove through the press and mix with the soy sauce, balsamic vinegar and sugar.
Cut the spring onion lengthways into wafer-thin slices. Also cut the beef fillet into thin slices and turn in the seasoning sauce. Cut the chicory into leaves and cut the large leaves once.
Heat the oil in a wok or pan, fry the meat over high heat for about 1 1/2 minutes while turning, remove from the pan. Now fry the chicory for about 1 minute, turning constantly. Add the meat, toss and continue to fry briefly. Pepper and carefully salt. Scatter the spring onions on top.
