Ingredients

  • 2 scoops beetroot, cooked (400g)
  • 2 apples
  • 1 teaspoon horseradish, freshly grated (or from the jar)
  • 4 tablespoon cottage cheese, (grainy cream cheese)
  • Lemon juice
  • salt and pepper
  • 1 tablespoon olive oil

Instructions

  1. Cut (or slice) the beetroot and an apple into thin slices, approx. 3 mm thick. Fan the slices on a plate and season with salt.
  2. Roughly grate the other apple and mix it with the horseradish and cottage cheese. Season with lemon juice, salt and pepper and serve on the beetroot slices. Drizzle the olive oil over the beetroot slices.
