Biscuit Roll with Prunes and Whipped Cream

Recipe for biscuit roll with prunes, whipped cream, and grated chocolate. This roll can be a dessert on your Christmas table.

Ingredients

For the test:

  • Flour – 160 g
  • Eggs – 5 pcs.
  • Sugar – 200 g
  • Vanilla sugar – 8 g
  • Baking powder – 10 g
  • Sunflower oil – 2 tbsp

For filling:

  • Pitted prunes – 250 g
  • Grated chocolate – 50 g
  • Cream 33% – 300 g
  • Powdered sugar – 2 tbsp

Directions

  1. Prepare all the ingredients you need.
    Instead of prunes, you can use any other filling you like.
  2. Let’s start by making a biscuit dough.
    Beat eggs with a mixer on high speed until foam forms. Then gradually add sugar, vanilla sugar. Whisk until a thick, light mass and stable peaks are formed.
  3. Pour in parts sifted flour with baking powder, stirring well with a spatula until smooth, so that there are no lumps. Add vegetable oil to the biscuit dough and mix.
  4. Cover the baking sheet with parchment, pour out the dough, carefully leveling and spreading it over the baking sheet with a spatula. The dough layer should be no more than 1 cm.
  5. Bake the biscuit in the oven at 190 degrees for 10-12 minutes. As soon as the biscuit starts to brown and the dough springs up when pressed with your finger, remove the baking sheet from the oven.
  6. Transfer the hot cake to a towel and remove the paper. Trim off uneven edges if desired. Turn the crust over so that it lies flat on the towel.
  7. Roll the dough into a roll using a towel. Roll up so that the flat side that was on the parchment is outside. Allow the biscuit to cool completely.
  8. Meanwhile, prepare the filling for the roll.
    Prunes should be fleshy and soft. If the prune is hard and dry, soak it in water for 15 minutes.
    Cut the prunes into small pieces.
  9. Sift the icing sugar through a sieve. Whip the cream with powdered sugar until thick and fluffy.
  10. Gently unfold the cooled roll, grease with whipped cream. Leave some cream for garnish. Lubricate so that an empty centimeter remains from each edge.
  11. Spread the grated chocolate on top of the whipped cream.
  12. Put prunes on grated chocolate.
  13. Gently roll the biscuit roll with the filling.
  14. Decorate the biscuit roll with the remaining cream or icing sugar. Optionally, pour over chocolate icing or sprinkle with grated chocolate.
    Let the roll soak for 2 hours.
  15. Sponge roll with butter cream and prunes is ready.
