Ingredients
For the dough:
- 250 g spelled flour
- 125 g butter
- 1 egg (s)
- salt
For covering:
- 350 g black cabbae
- 100 g bacon, diced
- 1 large onion (s), chopped
- 1 clove garlic, chopped
- 1 large tomato (s)
- 1 cup sour cream
- 2 egg (s)
- salt and pepper
- Walnuts
- 1 chilli, chopped
- 1 mozzarella or some hard cheese e.g. Parmesan, mountain cheese etc.

- Make a shortcrust pastry from flour, butter, an egg and a little salt and place in a pre-greased springform pan, form an approx. 2 cm high rim and refrigerate the pan.
- Leave out the bacon and fry the onions, garlic and chilli in it. Cut the black cabbage into fine strips and add. Dice the tomatoes and fry them as well. Steam the vegetables in the pan until they are only slightly firm to the bite, then place them in the pan with the shortcrust pastry.
- Whisk the sour cream with 2 eggs and season with salt and pepper, then pour the mixture over the vegetables in the mold. Rub mozzarella or hard cheese over it and sprinkle a few walnuts on top.
- Bake the quiche for 30 minutes at 200 ° C.
- Cut into 8 pieces like a cake and enjoy with fresh green salad.
