Ingredients

  • 1 kg potato (s)
  • 250 g smoked tofu, finely diced
  • 1 teaspoon stock, grained
  • 1 head lettuce (endive lettuce)
  • 1 large onion (s)
  • 4 tablespoon vinegar
  • 4 tablespoon oil
  • 0.25 liter ¼ soy milk (soy drink) or soy cream
  • salt and pepper
  • nutmeg

Instructions

  1. Peel, wash, quarter the potatoes and cook in salted water. In the meantime, brown the smoked tofu pieces to a nice brown color, deglaze with 1/8 l of water and cook with the granulated stock for 20 minutes. Clean and wash the lettuce, cut into fine strips and drain well. Peel the onion, dice it finely and whisk it with the vinegar and oil. Season with salt and pepper, mix in the salad. Drain the cooked potatoes, mash them finely and whisk them loosely with the whisk. Gradually add hot soy milk. Add the tofu and season the puree with nutmeg. Put the endive salad under the puree just before serving. Very simple and very tasty! Boerenschlot means something like farmer`s salad in the Rhenish dialect. It is usually eaten with blood or black sausage, but of course you leave them out with this variant! Normal milk can be used instead of soy milk, and bacon can be used instead of smoked tofus.
