Ingredients

  • 5 heart (s) pork
  • 1 liter meat broth
  • 300 g pickled cucumber (s)
  • 100 ml cucumber liquid
  • 1 onion (s)
  • 10 g flour for bindin
  • 1 ½ tablespoon oil
  • salt and pepper
  • 5 juniper berries
  • possibly sauce thickener, lighter

Instructions

  1. Rinse the pig hearts with water and blot off the remaining blood. Remove impurities and cut into large cubes. Cut the cucumber into slices or strips. Cut the onion into cubes. Season the hearts with salt and pepper.
  2. Heat the oil in a saucepan and fry the heart vigorously on all sides. Add cucumber and onion cubes and sauté briefly. Add juniper berries. Deglaze with cucumber water and stock and cook for about 50 minutes over medium heat. The cooking time in the pressure cooker is approx. 25 - 30 minutes. The cooking time may vary slightly depending on the nature of the meat and the electrical appliances.
  3. If desired, thicken the sauce with a light sauce thickener. Pasta is served with it.
