Ingredients

  • 1 broccoli
  • 1 onion (s)
  • 1 clove garlic
  • 150 g cooked ham
  • 1 pack ham cubes
  • 100 g whipped cream
  • 1 tablespoon, heaped sour cream
  • 3 egg yolks
  • 50 g parmesan, rated
  • 1 teaspoon parsley, frozen or fresh
  • 1 tablespoon olive oil or butter
  • 1 teaspoon, heaped vegetable stock, instant
  • salt and pepper
  • nutmeg

Instructions

  1. Cut the broccoli into medium-sized florets, remove most of the stalk. Put 1 teaspoon of stock in a pan with a lid, add the broccoli florets and fill up with warm water to cover the floor. Cook with the lid closed for approx. 6 minutes until al dente, depending on your taste. Then strain in a colander.
  2. In the meantime, dice the onion and the clove of garlic. Cut the ham into bite-sized pieces.
  3. Mix a sauce of egg yolk, cream, sour cream, parmesan and parsley in a bowl and season with a little salt, pepper and nutmeg.
  4. Wipe the pan briefly with kitchen paper. Then heat olive oil in the pan, add onion and garlic and fry. Then add the ham cubes and a few minutes later the cooked ham. Fry everything for 3 - 4 minutes over medium heat. Then the sauce is added. The heat should now be reduced a little so that the sauce is nice and creamy. This takes 2-3 minutes. If you like, you can taste it again here. Finally, stir in the broccoli florets and warm them up briefly.
