Bulgur with Bell Pepper and Cheese

Very tasty nourishing side dish. Can be served with any meat and fish, everyone will be very happy. It is very tasty.

Ingredients

  • Small bulgur – 1.5 cups
  • Vegetable broth or salted water – 2 cups
  • Sweet orange pepper – 1 pc.
  • Sweet yellow pepper – 1 pc.
  • Goat cheese – 125 g
  • Shallots – 1 bunch
  • Lemon (juice) – 1 pc.
  • Fresh mint – 1 bunch
  • Salt to taste
  • Ground black pepper – to taste
  • Paprika – 1 pinch
  • Olive oil – to taste

Directions

  1. Finely chop the onion. Pepper seeds and cut into cubes. Chop the mint.
  2. Grind the cheese slightly.
  3. Bring the broth to an almost boil. Put the bulgur in a bowl, pour the broth completely. Leave it on for 15-20 minutes to absorb all the liquid.
  4. 4. Stir with a fork to avoid lumps. Season with salt and pepper.
  5. Add onion, pepper, paprika, and lemon juice. Mix. Add salt if necessary.
  6. When serving, sprinkle the bulgur with vegetables with goat cheese and drizzle with olive oil.
