Ingredients

  • 200 g cottae cheese, 0.8% fat
  • 50 g cane suar
  • 1 teaspoon vanilla sugar
  • 1 egg (s)
  • 1 tablespoon lemon juice
  • 6 tablespoon flour (wholemeal)
  • 0.5 teaspoon ½ baking powder
  • 30 g raisins
  • 30 g almond slivers
  • Butter, margarine or sunflower oil

Instructions

  1. Put the cottage cheese in a mixing bowl and fluff slightly with a fork. Add sugar and lemon juice. Beat the egg, whisk with a fork and fold into the cheese mixture. Mix the flour and baking powder together and also add to the cheese mixture and stir well. Heat the fat in the pan and add small blobs of the mixture. Cover the cakes in the middle with raisins and almonds. When the underside is crispy brown, turn the cakes and fry on the other side as well. The cakes taste great on their own, but vanilla sauce or a scoop of vanilla ice cream are also excellent. Variation: Other dried fruits can be used instead of the raisins. Dried cranberries are particularly tasty.
