Ingredients

  • 500 g plums
  • 50 grams sugar
  • 1 packet vanilla sugar
  • 25 g butter
  • half a lemon
  • 0.1 liters apple juice or orange juice
  • 80 ml plum water
  • 1 pinch cinnamon
  • powdered sugar

Instructions

  1. Wash, halve and stone the plums.
  2. Melt the sugar and vanilla sugar with the butter in a pan, stirring constantly, and let the sugar caramelize slightly.
  3. Add the fruits, let them glaze for about 5 minutes, deglaze with the apple juice and bring the pan to the boil again.
  4. Add the fruit brandy and let the compote cool. Season to taste with lemon juice and cinnamon.
  5. Before serving, sprinkle with powdered sugar.
